The mandoline that sits in professional kitchens worldwide began as a solution to one specific Japanese kitchen problem, and the shape of the tool still reflects that origin.
Iwakuni, 1940
The founder, Uyuki Yamamoto, designed a slicer for daikon radish in Iwakuni City, in Yamaguchi prefecture. The company was formally established five years later, taking its name from the product.
The first version was made of wood, and it was bought almost entirely by hotels and restaurants rather than households.
That commercial origin explains a great deal about the design: it was built for volume, for speed and for repeated daily use rather than for occasional home cooking.
Wood to Plastic
The move from a wooden body to a moulded plastic one is the single largest change in the tool’s history.
Plastic is lighter, does not absorb water, does not warp, disassembles cleanly and can be moulded to tight tolerances around the blade. It also survives being dropped on a tiled kitchen floor, which wood does not.
What did not change was the blade: still stainless steel, still ground and finished by hand. Catalogues describing the current range at benriner retailers still lead on that, because it is the part that determines how the tool cuts.
Why Daikon Specifically
Japanese cooking uses enormous quantities of very finely cut daikon, and the technique it demands is exacting.
- Tsuma, the fine shreds served under sashimi
- Katsuramuki, a continuous paper-thin sheet peeled from a whole radish
- Pickles, which need uniform thickness to cure evenly
- Simmered dishes, where uneven pieces cook at different rates
- Salads and garnishes, where appearance is the point
Doing that by knife takes years to learn. A tool that produced the same result reliably was solving a real labour problem.
The Design Barely Changed
A flat runway, a fixed blade set across it at an adjustable gap, and a guard for the hand. That is the whole concept, and it has been refined rather than redesigned for over eighty years.
Tools that reach that state are usually solving a problem that has not changed either.
From Restaurants to Homes
The move into domestic kitchens came later and gradually, largely because home cooks saw the tool being used professionally.
That is still how most people encounter it: on a cooking programme, in a restaurant kitchen, or in the hands of somebody who worked in one.
What Stayed
The blade is the product. Everything else is a jig that holds it at a consistent angle and a consistent gap.
Understanding that explains why replacement blades exist and why a dull one makes the whole tool feel broken.
Still Made in the Same Place
Manufacture remains in Japan, in the same prefecture, which is unusual for a kitchen tool at this price.
